Shrimp and Chicken Pasta: Simple Recipes for Working Moms

Here is a quick and delicious pasta dish for all of you busy mothers. It is not difficult to make and does not take up a lot of time or money. It also goes well with garlic bread and a side salad.

Average cooking time: 25 minutes

Ingredients:

1. 1 tsp Old Bay seasoning

2. 2 tsp Adobo seasoning

3. pepper

4. 1 tsp salt (optional)

5. 1 tsp chopped basil

6. 1 tsp garlic powder

7. 1/2 tblsp minced garlic

8. 1 cup penne pasta

9. 1/4 cup chopped red bell pepper

10. 1/4 cup chopped orange bell pepper

11. 1/4 cup chopped yellow bell pepper

12. 1 cup asparagus or broccoli (depending on what the kiddos will actually eat ☺)

13. 6 chicken tenderloins (chopped)

14. 4 oz.  jumbo shrimp (peeled)

15. 3 tblsp butter

Instructions:
1. Cook penne pasta according to the directions on the box.

2. Season the shrimp and chicken tenderloins with one teaspoon of adobo and old bay seasoning.

4. Add 1 tblsp butter to a medium skillet and add the chicken tenderloins and shrimp.

3. Add bell peppers and broccoli to the skillet, cover until the shrimp and chicken is no longer pink.

4. In a small bowl, add two tablespoons of butter,  minced garlic, basil and garlic powder and mix together. Set aside.

5. Remove the penne pasta from the boiling water and season with one teaspoon of adobo seasoning.

6. Add penne pasta in the pan with the chicken tenderloins and shrimp.

7. Add the ingredients from the small bowl, mix together and let simmer for at least five minutes.

 


*This dish can be adjusted to your liking. If you wish to have a creamier sauce, you can add heavy cream and mozzarella cheese.*
