I’ always looks for quick meals. Who isn’t? Life is busy for us all these days and eating out isn’t always an option with Covid restrictions. These three stress free meals, give moms a few options for weekly meal preparations. Add a veggie and you’re good to go!
Fabulous 15-Minute Fettuccine
Ingredients
1 (8-oz) box fettuccine noodles
1 (4-o) can sliced mushrooms, drained or handful of fresh mushrooms
½ stick (4 TBSP) butter
1 TBSP minced garlic (a fresh clove, chopped, is great if you have one)
1 TBSP Worcestershire sauce
8 oz sour cream (I use light)
½ tsp parsley flakes
½ cup grated Parmesan cheese, divided
1 pound peeled, deveined raw shrimp (can use frozen/thawed or fresh) OR
4 raw boneless, skinless chicken breasts, cubed (You can also use tofu for this recipe).
*Our family’s go-to, finish-every-morsel meal. We favor the shrimp variation, but enjoy chicken for a change of pace.
Directions
- Boil pasta according to package directions while you’re cooking the shrimp (or chicken); melt butter in large skillet at medium-high heat.
- Add onions, mushrooms, Worcestershire sauce, and raw meat. Sauté for 5 minutes, then add mushrooms and garlic; cook for 5 more minutes until meat is done (taking care not to overcook).
- In large serving bowl, combined cooked and drained pasta, sour cream and parsley; mix until noodles are well coated.
- Stir in half of Parmesan cheese and meat; mix well.
- Sprinkle remainder of Parmesan on top and serve immediately. Fabuloso! Deliciously, deceptively easy; tastes like you’ve been cooking for hours!
Cheese Broccoli Chowder
*I could eat my weight in this yummy stuff; I add a can of crabmeat occasionally or a little variety. It’s palate pleasing, hearty, and a lot easier to make than it appears. Perfect for serving unexpected company.
1 medium onion, chopped
3 cups milk (I use low fat)
½ stick (8 TBSP) butter, divided
2 (10 ½ oz) cans cream of chicken soup
1 (10-oz) pkg frozen chopped broccoli
3 cups shredded sharp cheddar cheese
Directions
- In a large soup pot, sauté onion with ½ stick butter until tender. At same time, place broccoli in microwaveable bowl with 2 TBSP water; cover and heat in microwave for 5 minutes until defrosted.
- Drain broccoli and add to soup pot along with milk, soup, and cheese.
- Simmer over medium-low heat for 10 minutes, stirring frequently, until cheese completely melts.
Crispy Cheddar Chicken
*My daughter Cricket’s fave large family-feeding chicken recipe because of minimal prep time and the finished product is juicy and crunchy-licious. Note: You may use extra chicken but you’ll probably need to add more of the coating ingredients as you go.
Ingredients
4 raw boneless, skinless chicken breasts cut into strips
½ cup milk (low fat okay)
½ cup shredded cheese
10 Ritz crackers, crushed (the Garlic butter flavor are wonderful)
Directions
- Pour ingredients into three bowls in this order; milk, cheese, and crushed crackers.
- Dip and roll each 1”x 4-5” chicken strip into each; place cracker-coated chicken pieces in baking pan. Pour remainder of milk, cheese and cracker crumbs evenly over all pieces.
- Bake 30 -35 minutes until crispy.
- A serving option is to pour a jar of warmed of Alfredo sauce over the chicken just before serving, but it’s plenty moist and tender served as is.
