Dinner in a Flash: B.L.T Panini

Bacon, lettuce and tomato (BLT) sandwiches are a summer classic and one of my favorite things to eat for lunch or dinner.  I have put my own spin on a classic BLT to add a little more density and richness.  It can still be made for lunch or dinner and the ingredients can also be swapped or added to for your desired preferences or dietary needs. If you do not have a panini press, you can use a griddle or a skillet.

Ingredients:

1. Sliced bread of your choice

2. Bacon (I use turkey bacon)

3. Onion and Herb flavored cream cheese

4. Avocado

5. Cheese of your choice (sliced or shredded)

6. Sliced tomato

7. Lettuce or spinach

8. Sliced onions, sprout and peppers (optional)

 

Directions: working mom easy dinner

Step 1: Cook bacon

Step 2: Slice veggies and bread while bacon is cooking

Step 3: Heat panini press/griddle and spray with cooking spray

Step 4: On one piece of bread smear cream cheese, add bacon and additional cheese

Step 5: Form sandwich with both pieces of bread and cook in panini press until slightly toasted

Step 6: Open sandwich and add remaining ingredients (tomato, lettuce, onions, sprouts and peppers)

Step 7: Cut and serve

Veggies can be added to the panini before cooking in the panini press if desired.  I prefer to do it after so there is still a light and crisp aspect to the sandwich.  I also usually prefer to have my tomatoes, onions and avocado cold on sandwiches.  Feel free to use plain cream cheese or a different flavor as well.  This is a very versatile recipe and is a hit with both kids and adults!
