Easy Summer Dinner Idea: Margarita Pizza

Cooking dinner when its 90+ degrees outside might be a moms least favorite thing to do (well one of them). Summers are for salads, chilled soups, sandwiches and anything that takes 30 minutes or less. That’s exactly why this pizza recipe should be a summer go-to for moms everywhere. It’s fancy enough for moms and it’s child-proof (what kid doesn’t like pizza?).

*Preheat oven to 400 Degrees

Ingredients:

  • Pre-made dough half or large (You can purchase at your local Pizzeria for cheap)
  • 1 bunch of basil
  • Buffalo or Bocconcini Mozzarella
  • Pink Sea Salt
  • Fresh cracked pepper
  • 1 4 oz can of tomato paste
  • 4 garlic cloves minced
  • 1/3 cup water
  • Italian seasoning
  • Garlic salt
  • 1/4 cup parsley
  • Extra Virgin olive oil (EVOO)
  • 1/4 cup organic corn meal
  • 2 tsp organic butter melted

Directions:

  1.  Using round or rectangle pizza pan drizzle olive oil to lightly coat the pan.
  2. Sprinkle organic corn meal on top of oil.
  3. Work dough onto pan to fill all ends.
  4. Place back in oven for 5 min set aside.
  5. In a medium sauce pan, stir in tomato paste, garlic and water until marinara sauce consistency add salt and pepper to taste.
  6. Spread marinara sauce on half baked dough.
  7. Slice rounds of Bocconcini Mozzarella and spread through pizza.
  8. In small bowl, mix butter, a drizzle of EVOO,  parsley and garlic salt.
  9. Drizzle mixture on top of pizza.
  10. Bake in oven for 15-20 min or until crispy on the bottom.
  11.  Brush butter oil mixture over crust while baking.
  12. Top pizza with fresh basil and drizzle a little more of the butter oil mixture.
  13. Slice and serve with a side salad or roasted carrots (gotta get the veggies in).
