Most busy moms are always on the hunt for easy meals. This quinoa bowl is a classic go-to in my home. It is inspired by Tex-Mex burrito restaurants, but much more affordable. This recipe gets bonus points for being healthy, easy to prepare, as well as something the whole family will enjoy!
Average Cook Time: 20 minutes
Ingredients:
1 pound turkey burger
1 cup quinoa
1 small onion (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
1 can black beans (drained and rinsed)
1 package low sodium taco seasoning
1 tablespoon olive oil
¼ cup water
1 cup corn (drained, optional)
Optional garnishes:
Hot sauce
Sliced avocado
Shredded cheese
Salsa
Instructions:
1. Cook quinoa in accordance to package directions. While the quinoa is cooking, brown the turkey burger in a medium skillet.
2. Dice onions and peppers. Sautee onions and peppers with olive oil together until they are medium soft in consistency.
3. Add taco seasoning and ¼ cup water to ground turkey burger, mixing thoroughly. Add pepper and onion mix, corn and black beans to ground turkey burger, let simmer for 3-5 minutes.
4. Serve the burger and veggies over quinoa. Add garnishes as desired.
This recipe is open to interpretation. Brown rice may also be substituted for quinoa. There is a lot of flavor in the burrito bowl without adding anything else, but I like to add hot sauce to mine. I prefer to put these items on separately as spicy foods are not always kid friendly. The ingredients are (aside from add-ons) are simple, low calorie, and full of protein.
