If you’re like most people, you don’t have a huge amount of time to prepare meals for yourself during the week. You’d love to spend an hour or two cooking in the evening, but by the time you get home from work, all you want is something simple, quick and delicious.
Fortunately, there are a bunch of mouth-watering meals you can whip up in a flash. And they’re all worth the effort. Here’s what to make.
Avocado-Lemon Pasta With Dill
This recipe couldn’t be easier to make. And it’s delicious too: something that you might get in a restaurant.
To make it, you just need a handful of ingredients.
Start by boiling some salty water and add your pasta – any type will do, though spaghetti is a popular option. Then blend a ripe avocado with a lemon in a food processor. When the pasta is cooked, scoop out the avocado and mix it with the pasta and then add some chopped fresh dill to the top. Voila – you have an easy weeknight meal with less than 5 minutes of prep.
Crock Pot Ribs
If you’re looking for something a little meatier, why not try crock pot ribs? Again, this is a super simple recipe that takes just a few minutes to prepare.
You just combine the ribs rub in the morning, coat the ribs, and then place them in the crock pot for 8 or 9 hours while you’re out at work. Once you get back, you have a delicious meal you can tuck into straight away – no effort required.
Falafel
Falafel are delicious balls of mainly chickpeas and flour. Creating them from scratch is a bit of an effort. But today, you can get them pre-packed. Just follow the instructions for cooking them in the oven.
While they are cooking, put a couple of pitas under the grill and make a freshly-chopped salad. Service pitas with Greek yogurt or ranch dressing from your refrigerator and enjoy.
Stir-Fried Teriyaki Veg
Making stir-fried veg is super simple and something that everybody should try at home on a busy weeknight.
Buy a bag of stir-fried veg and then add it to the pan. To create the teriyaki flavor, add the following ingredients: soy sauce, maple syrup, garlic, ginger, and miso paste. If you want some rice with it, just microwave a bag and you’re done! It’s that simple.
Lemon And Garlic Shrimp
Here’s another super simple weeknight recipe that takes no time at all and only involves washing up one pan: lemon and garlic shrimp.
Get some king-sized shrimp from the store with their tails still intact. Then add some butter to a pan and bring it to a sizzle. Start by cooking the shrimp on a medium heat and, while you’re cooking add some lemon juice, lemon zest and slices of lemon to the pan. Toward the end of cooking, add chopped parsley and cracked black pepper and enjoy.
So there you have it: some super simple meals that you can whip up super fast for weeknights.
