Pan Seared Salmon with Mint and Basil Pesto

It’s easier to give kids  nuggets and burgers because that’s what they like (and that’s what’s faster),  but sometimes it’s good to introduce them to something different. This dish is full of color, flavor and nutrition. Serve it will their favorite green veggie for an easy, healthy dinner!

Ingredients

•4-5 oz scaled skin on Salmon Filets
•Half bunch of Fresh Basil
•Half bunch of fresh Mint
•1/3 cup of Pumpkin Seeds
•2 tbs honey
•Salt and pepper
•1-2 Lemons squeezed (depends on how much you like citrus)
•1-2 tsps. of Parm or Nutritional yeast to keep it vegan
•EVOO (extra virgin olive oil)
•3 cloves of garlic

Directions:

•Cut strip of salmon in half for more servings you should get roughly the size above
•Drizzle EVOO on booth sides and season with S&P
•Drizzle EVOO in skillet on med high heat and turn oven on 375 F
•Place salmon skin side down first let sear for 3 min and then flip and sear another 3 then in oven

Pesto

•Take the mint and basil, garlic, pumpkin seeds, honey, s&p, lemon, parm or Neut Yeast throw it in a food processor and add evoo until mixture is smooth and creamy like. Top your pesto on salmon and serve!
